Dysphagia recipe… for you!

Are you ready to taste comfort in a bowl? No matter how many new recipes I explore, I always come back to this stew! It’s super flavoursome and packed full of wholefood ingredients that leave your body feeling incredible. The lentils with the pumpkin also create a wonderful consistency, making it very simple to modify for different texture needs. Meaning this is a dish that you can delightfully share with the whole family.

Now this recipe has a secret ingredient that really steals the show… MISO! Not what you expected? I promise you, the saltiness of miso is exactly what this stew needs, and lifts the flavour profile to another level.

So what are you waiting for? Let this spiced lentil, coconut, and miso stew lead the way for some extremely delicious comfort!

Spiced lentil, coconut and miso stew


Serves 2

1 cup red lentils or yellow mung beans
2 large potatoes
½ kent pumpkin
2 carrots
1 red onion
400ml coconut cream (canned)
3 cups vegetable stock
4 tbsp white miso paste (trust me on this one)
4 cloves garlic
1 tbsp turmeric
1 tsp cumin
1 tsp nutmeg
Pinch salt and pepper

Place a large saucepan on medium heat. With a drizzle of olive oil sauté the diced onion for 5-7 minutes. Meanwhile, cut the potatoes, pumpkin and carrots into roughly 1-inch pieces. Add them to the pan along with the minced garlic, turmeric, cumin and nutmeg. Stir for 2 minutes until fragrant.

Incorporate the coconut cream, vegetable stock, lentils, miso paste, salt and pepper, and stir until combined. Bring the soup to a boil, then reduce it to a simmer for 30 minutes.

Using an immersion blender, blend the soup to its desired consistency. Serve and enjoy (optional to add a dollop of coconut cream or yogurt).

IDDSI 5: Minced & moist: Once cooked, use an immersion blender and blend the soup until lumps are no larger than 4mm. An extra cup of lentils while cooking can increase the thickness. The soup should remain in a pile on a spoon rather than running flat (see test guide).

IDDSI 4: Pureed: Once cooked, blend the soup using a high powered blender until it becomes completely smooth with no lumps. An additional cup of lentils while cooking can increase the thickness. The soup should remain in a pile on a spoon rather than running flat (see test guide).
